This Fair Trade Organic coffee comes to us from the Sierra Azul Cooperative in Chiapas, the Southernmost region of Mexico. The mountains of the region stretch into bordering Guatemala and are found within buffer zones around one of the world’s largest forest reserves, El Triunfo Biosphere Reserve.
This coffee is grown at an elevation of 1200-1900 MASL. It is depulped the same day of harvest, then fermented for 12-18 hours in tanks before being washed clean of mucilage and dried on patios or in mechanical dryers.
Because of the diversity of altitude, varieties and climate, Mexico is full of potential for producing specialty coffee. The quality of coffees from this region has improved greatly in recent years through lot separation, altitude separation, and variety separation.
Mild citrus acidity with a soft, creamy body.
We’re tasting bittersweet chocolate, caramel, almond and raisin.
