ASMUCAFE is the Asociación de Mujeres Agropecuarias de Uribe, an organization of women farmers and landowners in El Tambo, a municipality within Cauca. As an association, ASMUCAFE members seek to improve the quality of life of their families and community through coffee farming and collaboration.
Grown at 1850-1900 masl, this Castillo coffee underwent a "double" fermentation process. The cherries were left in the loading hoppers for 14 hours, then depulped in the afternoon and evening and placed into traditional open fermentation tanks for another 10 hours. They were washed three to four times before being dried for 8–12 days.
We're tasting orange peel, anise, graham cracker.
