This Guatemala Waykan is an excellent example of the dynamic character of coffees from Huehuetenango with crispy acidity and a balance of toffee and candied nuts. Waykan, in the Mayan Q'gnjobal dialect, means "star," or "light that shines in the sky at night." The indigeneous population in and around Huehuetenango plays a large role in the coffee product here which accounts for roughly 80 percent of the local economy.
We're tasting grape acidity, caramel, and turbinado sugar.
